Only the top 7.5% of all coffee produced in the entire world has the exceptional qualities to be considered a Specialty Coffee. These are coffee beans grown with the utmost of care, and have no taste altering defects. Judging the look of the processed beans is only the beginning. From there, they must be stored and shipped with extreme care as to not let the beans absorb any foreign odors or lose any of their moisture content. Specialty coffees must also be roasted by a skilled professional, as to fully develop every element and nuance of the bean. Finally, they must score within the specialty range in a cupping from a trained and experienced cupper.
